{"id":87,"date":"2011-04-08T10:50:16","date_gmt":"2011-04-08T14:50:16","guid":{"rendered":"http:\/\/rawfooddvds.com\/wordpress\/?p=87"},"modified":"2021-04-18T20:12:50","modified_gmt":"2021-04-19T00:12:50","slug":"vegan-non-dairy-yogurt-and-cheese","status":"publish","type":"post","link":"http:\/\/rawfooddvds.com\/wordpress\/vegan-non-dairy-yogurt-and-cheese\/","title":{"rendered":"VEGAN Non-Dairy Yogurt and Cheese"},"content":{"rendered":"<p>I incorporate this \u201cricotta cheese\u201d in my raw \u201cliving\u201d lasagna, pizza recipes, salad dressings, appetizers, or as a satisfying\u201d go-to\u201d on a stalk of celery when I\u2019m craving that creamy salty crunch that should always be on-hand in any GREEN refrigerator, you can also find great ingredients in\u00a0<a href=\"https:\/\/thevegancompany.co.uk\/\">thevegancompany.co.uk<\/a>.<\/p>\n<p>Substitute NON-DAIRY SEED \u201cYOGURT\u201d &amp; \u201cCHEESE\u201d:<br \/>\n<!--more--><br \/>\nNatural LIVING probiotic cultures with acidopholous, lactobacilus, &amp; bifidus for enhanced proper digestion:<\/p>\n<p>The fermentation process also renders these seeds into easily digested and assimilated amino acids, simple sugars, &amp; essential fatty acids. Serve as garnish on Green Blended Soups or bowl of berries sweetened with raw honey or low-glycemic stevia.<\/p>\n<p>Equipment: Vitamix, Blend-Tech, or any blender with ice-crush capacity<\/p>\n<h3>Yogurt:<\/h3>\n<p>2 cups purified, filtered water or Rejuvelac (an optional fermented \u201cstarter culture\u201d)<\/p>\n<p>1 cup hulled raw organic sunflower or pumpkin seeds<\/p>\n<p>Soak seeds 8 hours &amp; sprout 8 hrs.<\/p>\n<p>Blend at low speed &amp; then advance to high speed until mixture becomes a smooth pasty liquid.<\/p>\n<p>Pour into a glass jar. Secure a sprout bag or cheesecloth over top with a rubber band.<\/p>\n<p>Set aside out of direct sunlight for 3 \u2013 5 hrs. You may need extra time if made with water instead of rejuvelac. Stir and taste, culture to desired tanginess.<\/p>\n<p>Refrigerate tightly covered up to 5 days.<\/p>\n<p>Add lemon juice &amp; raw honey or use stevia for a low glycemic, low calorie sweetener and serve over a bowl of berries for an awesome guilt-free dessert!<\/p>\n<p>Herbed \u201cRicotta Cheese\u201d:<\/p>\n<p>1\/4- 1\/2 cup purified water<\/p>\n<p>1 Cup raw almonds (soaked 24 \u2013 48 hours in refrigerator and peeled) or use \u201craw\u201d cashews soaked 4 hours.
